Ingredients:
2 Tbsp almond flour (or flour of choice)
2 Tbsp quick oats
1/4 tsp baking powder
2 Tbsp unsweetened almond milk (or milk of choice)
1 egg
1 Tbsp honey or pure maple syrup
1 Tbsp peanut butter or almond butter (or any nut or seed butter of choice)
1-2 Tbsp chocolate chips, nuts, pumpkin seeds or any other desired additions (optional)
Directions:
In a microwave safe mug, add all ingredients in order that they are listed, stirring to combine each ingredient.
Once all ingredients are mixed thoroughly, cook your mug cake in the microwave for 45 seconds.
If your mug cake still needs a bit more cooking time after 45 seconds, cook it for another 15 seconds. If needed, continue to cook for 15 second increments for no more than *90 seconds in total.
After cooking, let your mug cake cool for a few minutes before getting a spoon and enjoying it right out of the mug!
